Our Process

A time-tested technique, perfected

At Melkodige, the way we process and dry our beans has an enormous effect on its
taste and texture.

All our coffee is grown under a unique 3-tier shade system.

Step 02
Step 02

Fully mature ripe cherries are individually hand picked by our expert pickers.

Step 03

They are then visually sorted again to remove any unripe cherries.

Step 04

The ripe cherries are then processed in the wet mill to remove husk and mucilage.

Step 05

The wet beans are then moved to raised trays to drive out surface moisture.

After a day the beans are evenly spread on patio bricks.

The beans are raked at regular intervals. It takes seven days of sun drying to get the desired moisture level of 11%.

Now the beans are filled in hessian bags and moved into well-ventilated godowns.

Here the beans are allowed to mature for forty days to bring out their whole range of flavours and aroma.
